Avocado & Edamame Salad / Call Me PMc

            Did I tell you about the time I tried to make traditional Chicken and Dumplings low fat??
Yeah, it didn’t go so well!! My husband still likes to pick on me about it! I mean, truthfully, I just had his waistline and heart in mind… and my skinny jeans. I think he’d rather go hungry than eat them…..actually, I think he did go hungry that night….
So, sometimes, I just want to do some healthy meals. But, I’ve learned that some recipes you just can’t
‘skinny’ up. But, a good green on green on green salad like this one is a keeper! Pinky Swear!!

Avocado & Edamame Salad (for 2 dinner size salads or 4 side salads)
Ingredients:
4 c spring mix with baby spinach
2 T lime juice
1 avocado, sliced
1/4 tsp nutritional yeast
1/4 tsp flax seed
1/2 c edamame
1 T sliced almonds
Directions:
Peel and slice avocado. Squeeze lime juice over cut avocado so prevent them from turning brown. Microwave edamame until hot and soft. For 2 dinner salads, layer half salad greens, avocado, edamame, nutritional yeast, flax seed and almonds in each salad bowl. Top with 2 T salad dressing of your choice.
I also found this new Kraft Mango Chipotle ‘Anything’ dressing that complimented the flavors in this salad beautifully.
