Chocolate Chip Cookie Pie / Call Me PMc

         A girl can only go so long without baking and without a ooey, gooey, sinfully decadent dessert!! 

Apparently 13 days and 3 hours is my limit!!
Seriously, I haven’t baked since before Christmas!! And the only dessert I’ve had was dried up cake, unless you count stealing my kids Halloween stash…
oh, and there was that cookie at Chad’s….
ok, never mind, but I assure you I haven’t baked!!
For me not baking would be like not running, I would go crazy!!!!
OR I’d be mean (that’s what Big Daddy says about it!
and I’m certain that’s not a very nice thing to say – true, but not nice!)
Speaking of Big Daddy, I can hear him now, “That’s so sweet it makes my teeth hurt!”
Excuse me. I most certainly have never had anything too sweet,
like ev-er!! (I got that from Taylor Swift!)
You can make or purchase a pie crust, whatever, I don’t care, just get a pie crust and put it in a pie pan and bake it for 10 minutes on 350. Prick the bottom so you don’t have a huge bubble in the middle.
After the crust has baked, throw (or place) your chocolate chips and pecans in the bottom of the pie.
You should have been mixing this up while the crust was baking, we’re on a schedule here, folks, get ‘er done, a craving is here and it’s time for dessert!!!
And, there you go!! Beautiful isn’t it?
Ahhhh, and at least you don’t have to wait for it to cool and take pictures before you dive in!!
Eat it hot with a big scoop of full fat vanilla ice cream!!


Chocolate Chip Cookie Pie
Ingredients
1 c chocolate chips (I like milk chocolate)
1 c pecans, chopped
3/4 stick butter, melted
3/4 c white granulated sugar
1/2 cup + 1 T self-rising flour
2 eggs, beaten
1 tsp vanilla
Directions
Preheat oven to 350 degrees. Place pie crust in pan and crimp edges, prick bottom with fork, then bake for 10 minutes. Crust will be lightly brown. Spread chocolate chips and pecans evenly in bottom of pie. Mix butter, sugar, flour, eggs and vanilla until smooth. Pour over chips and nuts and spread evenly. Place on a cookie sheet and bake 35 minutes. The top should be brown but the center will remain slightly ‘jiggly’. It will set after it cools. Allow to cool and set 10 to 15 minutes before cutting.

This pie is awesome with vanilla ice cream or whipped cream (or both!).

  10. PMc…if you aren't a big fan of nuts, any creative ideas of something to add with the chocolate chips in place of pecans? Don't get me wrong, I'm perfectly happy doubling the choc chips :) but just curious!

  11. I can't think of an alternative because adding raisins or something like that would change the texture, I believe. Doubling the chips would be A LOT of chips maybe an extra 1/2 cup.
    NO Nuts or oatmeal, what else? ;)
