PMc’s Famous Rocky Road Brownies / Call Me PMc

I’ve been craving these brownies for a while but wanted to wait and make them for Valentine’s Day.
Growing up my mother made a version of these, but instead of using cocoa as she did, I prefer
to melt chocolate for the brownie batter. It gives it a richness that cocoa powder cannot, in my opinion.
I also like to make them in a 15 x 10 inch pan for thinner brownies.
Even baking them in a larger pan and making them thinner, these brownies are incredibly rich.
Not too rich for me, mine you.

Perfect for persuading your sweetheart you need another diamond family dinners,
cookouts, reunions, church potlucks, or tailgating.


If you like chocolate, this is the brownie for you!
The brownie is dense and gooey, topped with fluffy marshmallows then
creamy, luscious chocolate frosting and crunchy salted pecans.
I added the strawberries, cut to look like a heart, for Valentine’s Day.
You could add fun sprinkles if you are doing them for children.
 It’s very simple, put all your ingredients in a mixer then add melted butter and chocolate
*Tip - I like to line the pan with parchment paper or aluminium foil for easier clean up.
You still need to spray the paper with non-stick spray.
 I remove the brownies 10 minutes before they’re finished cooking and spread marshmallow over the top
then return to oven and bake another 10 minutes.
This allows the marshmallows to toast, I like them slightly brown.
While the marshmallows are toasting, make the chocolate frosting.
 Pour warm frosting over cake as soon as you remove it from the oven.

Rocky Road Brownies
Ingredients
1 c pecans, chopped
1 tsp coarse salt
1 c butter, room temp
4 oz semisweet chocolate, chopped
2 c sugar
1 1/2 c all-purpose flour
1/2 c unsweetened cocoa
4 large eggs, room temp
1 tsp pure vanilla extract
3/4 tsp salt
1 (10.5 oz) bag miniature marshmallows
1 recipe Chocolate Frosting (recipe follows)
Directions
Heat a sauce pan to medium. Salt pecans then add them in a single layer in the sauce pan and toast 8 to 10 minutes.

Preheat oven to 350 degrees. Spray 15x10x1 inch jelly roll pan with non-stick spray. I also like to line it with parchment paper or aluminum foil for easier clean up.

Melt 1 c butter and 4 oz chocolate in the microwave for 1 minute, stir. Heat at 30 second increments and stirring until melted.

Whisk sugar, flour, cocoa, eggs, vanilla, and salt together. Pour chocolate mixture into dry ingredients and combine. Don’t over mix. Pour batter into prepared 15x10x1 inch pan.

Bake at 350 degrees for 20 minutes. Remove from oven and spread marshmallows evenly on top. Bake an additional 8 to 10 minutes or until marshmallows are melted and toasted. Drizzle chocolate frosting over warm cake.

Yield: 15 servings
Prep Time: 15 minutes
Bake Time: 40 minutes

Chocolate Frosting
Ingredients
1/2 c butter
1/3 c unsweetened cocoa
1;3 c milk
1 16 oz pkg powdered sugar
1 tsp pure vanilla extract
Directions
Stir together first 3 ingredients in a sauce pan over medium heat until butter is melted. Cook, stirring constantly, 2 minutes or until slightly thick. Remove from heat. Whisk in powdered sugar and vanilla. Whisk until smooth.

Yield: 2 cups
Prep time: 10 minutes
Cook time: 5 minutes
