Valentine Dinner / Call Me PMc

I’m planning a special dinner for Big Daddy for Valentine’s Day and wanted to share.
He loves this pork chop! It’s the recipe in which I won the Mississippi Magazine Recipe Contest (2011).
Now that was big fun!
This little recipe also won an Iron Chef Competition!
It’s that good, pinky swear!
Now, while we’re on the subject of Big Daddy, let me tell you how he got that nickname.
His nickname has actually evolved from
Wisket – from a memo at work in which the sender had their fingers on the incorrect keys!
WJ – that’s one’s hard, his initials
W – pronounced ‘dub’, you know, for dub-ya or W!
So actually Big Daddy came from ‘Daddy’ when the boys were wee little, every body bigger (older) than them was Big, it didn’t matter if you were overweight or normal or skinny you were Big!
So Daddy was, you guessed it, Big Daddy!
Except me, not gonna be Big Momma! Hell no!!
 I nipped that shit in the bud…
So I got to calling him Big Daddy as well.
Now the boys call him just Big
Hi-larious!!
I never really asked if he likes it, or minds when I call him Big Daddy on here.
I mean, after all, I could call him worse, right?! :) )

I know this is a winning combination, we actually served this exact menu at Supper Club. I served the corn salad in Romaine leaves. It made a pretty presentation and you could pick the whole ‘wrap’ up and munch! The corn salad is also a cool contrast to the spicy pork.

The red pepper jelly is hot! I have found that the Braswell’s brand is as hot as the Tabasco brand! And it can be difficult to find at the grocery store. Sometimes, it’s shelved with the jelly. However, sometimes it’s housed in the Ethnic section Oriental, Mexican, Cajun! I don’t know, I just don’t know what to say about that!!

The 10 Minute Rolls are just too easy not to make. Make more than you think you’ll need, they go fast!

The last time I made the Chocolate Chip Cookie Pie, Big Daddy started eating the last 1/4 right out of the pie plate so that no one else would eat any of it!! (At least he didn’t lick it like the boys in college did to save their stuff! True Story!)
