Can you believe it’s March!? Where did February go?
Personally: I stepped it up in my running and training for a Half Marathon. I ran the longest run I’ve ever run to date of 11.5 miles in February. I think I’m ready to take on a Half now. It takes mental toughness to stay focused and keep getting out there every day. My training hasn’t been perfect, but I’ve stayed focused.
Blogging: I asked you on Facebook if you had any questions for me (with the exception of you couldn’t ask age or weight). Here they are:
1. What is the favorite thing your mom cooked for you as a child and what memories does it bring back?
I am not a big eater (I know, crazy, right? But I love to cook!) and I’m not a big meat or fried food eater, but my Granny used to make fried minute steak and Skillet Potatoes. And let me tell you – It. was. good!!!
I would put the platters beside my plate and dare anyone to get any. It. was. good!!! My Granny raised 7 children in rural Mississippi during the 1930′s and 40′s, she could turn nothing into something and make it taste better than a Five Star Restaurant meal (Except that one time when I asked what she was cooking – my Mother and Granny hesitated and said ‘Dumplings’, not chicken and dumplings, hmmm fishy. So I went to the stove and lifted the lid – BLAHHHHH squirrel!!!! Yeah…. bleck, maybe that’s why I’m not a meat eater!) I digress. After my Granny wasn’t able to cook anymore, my mother started making this steak and potatoes for me. She still does. I had it last week when we visited. 
2. What are some of my go-to Summer meals? 
We grill a lot so it doesn’t heat up the house (although going in and out of the back door probably negates that). I’ll throw together sides like: Corn SaladOnion, Avocado and Mango saladPasta Salad. I also grill extra proteins and use steak or chicken on salads and sandwiches, use fish or shrimp in soft tacos. Then I add an interesting sauce or dressing to liven it up a bit.
3. (From my husband) Do you think wives should clean their husbands showers?

5. Refreshing Grape Salad - This was one of the first posts I did. I edited the picture and added it to my Pinterest board and it got traffic. It’s a great side dish or light dessert for Spring.

  2. Oh I love the Seared Scallops! I actually have some, and didn't know what I was going to make, so I am totally stealing this recipe! Happy SITS day! So glad I stopped by!
