Slow Cooker Spicy Sweet Country-style Ribs

Today was the first day of school.

I hate it.

I cried.

*sigh*

Today was the first time ever that neither one of the boys wanted me to walk them in on the first day. Maybe because they’re at the same school and Ryder felt secure with Lincoln being there. He assured me that he stilled loves me. I’m sure he saw the tears welling up in my eyes. I hate each new school year. I like hanging with them, we had so much fun this Summer.  I’m glad they’re well-adjusted and not needy. They have good teachers and I know they’ll have a good year. I still me them and their silliness all day!

So I’m feeling nostalgic, sharing pics of some of our fun Summer activities!

I know you’re thinking, enough with the Jones Family Memories! Ok, ok, let’s get to the recipe. I’m always looking for great tasty dinner options that are easy and don’t require a lot of hands on time for me in the kitchen. Slow-cookers are a great way to incorporate in my plan and I don’t always just make soup in them. My Slow Cooker Spicy Sweet Country-style Ribs are perfect for the meat-eating boys. I chose Country-style cut for this recipe because they are the meatiest ribs. I usually find them in packages of 6 to 8 ribs. These ribs become really tender using the low and slow method in the slow cooker. If I have time, cook on the lowest setting for 6 to 8 hours.

Slow Cooker Spicy Sweet Country-style Ribs

Prep Time: 10 minutes

Cook Time: 6 hours

Total Time: 6 hours, 10 minutes

Yield: 8 servings

Ingredients

  • 2 packs or 4 pounds country-style pork ribs
  • 1 tsp minced garlic
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/c c onion, minced
  • 18 oz bottle hickory-flavored bbq sauce
  • 1 jar jalapeno jelly (red)

Instructions

  • Sear ribs in a (very hot) cast-iron skillet one minute on each side.
  • Turn slow cooker on low, add ribs to cooker. Top with garlic, salt, pepper, onions, bbq sauce and jalapeno jelly. Cook on low 6 to 8 hours. Remove ribs and skim fat from sauce. Pour sauce over ribs on serving platter.

  1. So fun to see a recap of your summer! Your boys are getting big. I can just see you cruisin around in your new golf cart! Love the rib recipe too. All I ever find here is the green jalapeno jelly. Can I use that??

    • I know, I hate they’re getting big :( but they’re so much fun right now. We have worn the wheels off that cart! So much fun! The green has a slightly diff flavor and isn’t as hot, but I’ve used it when I can’t get the red and it’s very close to the same.

  2. I love the spicy sweet sauce for these ribs Paula!!! Seriously fantastic! And I know what you mean, it really is so sad when school starts. I love having the kids home, we’ve had so much fun. The start of school is a reminder that time passes so quickly!

    • That’s what it is for me, I think 5th grade!? How can that be I just brought him home from the hospital!!!

      This sauce is very good, I love jalapeno pepper sauce!

    In no time they’re gone and you look in the mirror and realize you’re middle aged or late middle aged. If I would say one thing I would tell you to not just go about your daily activities but create special time for the kids, whether at home or on vacation. We had a lot of good times in our pool and on our trampoline, snow skiing, going on a “visit roller coasters” road trip, spending the whole month of July at the beach, and visiting National Parks (which they hated at the time). I hope they will remember these things when I am old. PS I am going to cook your ribs, which I am sure they will say they hate but which they will remember with fondness later.

    • Funny, because today is the last day of school. I’m so happy they’ll be home with me, but the school year flew by. It was a tough Fall semester but we finally got lined out this Spring. Thanks for your sweet words. I wish time could stand still and they’d be my babies forever.
