Mommie! Mommie! Daddy won!!

He did? What did he win??

He won the gumball machine on ebay!!

er…………………………..Wesley!?! You know you didn’t win. You know you have to actually pay for that, right??

And so went our conversation over this

I kind of love it myself! Wesley has been wanting an old gumball machine for a long time for his office. If you missed our office renovation you can check it all out *here*. It was a doozy of a renovation, but worth every second put into to it. He has several antiques on display so this really fits in perfectly, even though he didn’t actually win it!

Wesley and I both love antiques and you can find some neat pieces at most festivals. Therefore, we often go to festivals in the area. However, there’s one festival that I attend every year in a nearby town, the Amory Railroad Festival, that I don’t necessarily go to looking for antiques. Do you know why I go to this festival? Because there’s a vendor that serves the best Apple Fritters that you’ll find anywhere on the planet!! They are the perfect amount of crispy, apple-ly cinnamony goodness! If you go with me, don’t expect me to share my bag of my tasty treat, you just need to get your own.

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 12 servings

Ingredients

Waffles

  • 2 cups apples diced small
  • 3 Tablespoons butter
  • 2 cups all purpose flour
  • ¼ cup brown sugar
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 1 and ½ cups whole milk
  • cup vegetable oil
  • 2 large eggs beaten
  • 1 teaspoon cinnamon

Caramel Sauce

  • ½ cup butter
  • 1 cup packed brown sugar
  • ¼ cup cream or whole milk
  • pinch of salt
  • ½ teaspoon vanilla extract

Instructions

  • Saute' apples in butter in a large saute' pan 3 to 5 minutes until heated through but still firm. Remove from heat and allow to cool.
  • In a large bowl, combine flour, sugar, baking powder, cinnamon and salt. In another bowl combine eggs, milk and oil.
  • Heat waffle baker.
  • Combine wet and dry ingredients, add apples and stir until combined. Do not stir too much.
  • Spray waffle baker with non-stick spray.
  • Ladle batter onto waffle baker being careful not to over fill.
  • My waffle baker is a thick Belgian type make and has a setting to set for how crisp you want them. I set mine to medium, this takes 2 to 3 minutes to cook. Adjust your baker to the desired doneness you desire. Serve with warm caramel sauce.

For caramel sauce

  • Melt butter and sugar over medium heat in a medium saucepan. Stir occasionally. Allow mixture to simmer until it starts to bubble and look foamy. Cook 3 to 5 minutes. CAREFULLY, stir in milk, salt and vanilla. Remove from heat. Serve with hot waffles.

Notes

Keep waffles crisp by placing on a wire rack in a 200 degree oven until the entire batch is cooked.

I made these Gluten Free and Dairy free. I used GF All purpose flour and dairy free butter and rice milk. I also used coconut oil instead of veg oil. They turned out great!!!Thanks for the recipe! 🙂
