We have completely been swamped with the boys’ activities and work lately. I wanted to surprise Big Daddy with a sweet date night complete with his favorite meal, but it just wasn’t going to happen any time this week. The only time we could possibly sneak in time just the two of us would be during the day when they’re at school. I packed a lunch and we enjoyed a simple lunch.

I made his favorite sandwich and even made a dessert sandwich with Breyers Gelato Indulgences. Breyers Gelato Indulgences comes in four gourmet flavors. You’ve got to try these, there is nothing else like this Breyer’s Gelato in the grocery stores!

  • Vanilla Caramel features creamy vanilla gelato topped with luscious caramel sauce and gourmet caramelly curls
  • Raspberry Cheesecake features cheesecake gelato topped with luscious raspberry sauce and gourmet graham crumble

Rich in chocolate inside and out, if you love chocolate this is the dessert for you. Double Chocolate Breyer’s Gelato Sandwich Cookies are crispy on the outside with gooey chocolate inside. Usually, I eat them warm while the chocolate is still melty. For these cookie sandwiches, you’ll need to let them cool. It’s totally worth the wait.

Triple Chocolate Breyers Gelato offers a creamy element to the sandwiches. Silky gelato is perfect eaten straight from the container. As well, it’s out of this world when sandwiched between two decadent double chocolate cookies!!

Double Chocolate Chip cookies are also a kid-favorite snack. If your nerves can take it, allow them to help make these cookies. Kids love to help in the kitchen, they can measure and stir. This batch makes about 18 2-inch cookies. They’ll be plenty for your lunch date so package some up for your kids. The kiddos will feel special enjoying a snack they helped prepare!

Ingredients

  • 1 and ½ cup cup chocolate chips divided
  • 1 and ¼ cup all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter softened
  • 1/2 cup brown sugar firmly packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • Breyers Gelato Double Chocolate

Instructions

  • Melt 3/4 cup chocolate chips in microwave. Stir until smooth. Allow to cool.
  • In a small bowl, combine flour, baking soda and salt.
  • In the bowl of a mixer, cream butter, brown sugar and granulated sugar.
  • Add cooled chocolate and egg; beat well.
  • Graudally blend in flour mixture.
  • Stir in remaining 3/4 cup chocolate chips.
  • Chill dough 15 to 30 minutes minimum.
  • Using a spring release scoop, place on an ungreased cookie sheet.
  • Bake at 375 degrees Fahrenheit for 8 to 9 minutes. Allow to stand 5 minutes on cookie sheet before carefully removing to a wire rack. The cookies will need to be completely cool before making ice cream sandwiches.

Notes

  • Using a spring release scoop ensures all the cookies will be the same size.
  • By doing this they will all cook at the same time.
  • As well, they'll match up better for the ice cream sandwiches.
  • If you're not making ice cream sandwiches with these cookies, they are fantastic warm with a glass of milk!
  • Makes about 18 2-inch cookies
