My oldest son wanted to have a sleep over with this friends. He said, “We’re going to stay up all night!”

“Oh, yes, that’s what I want too!” (Not.)

I know. I know. He’ll be grown soon enough and I’ll miss these times. And, to be honest, I really don’t mind as long as I get to sleep!

The last time he had a sleepover, they stayed in a tent in the back yard. (That was before our possum saga. I’ll save that for another post.) They stayed up and kept me up until after 2:00 a.m. At 5:00 a.m., something woke me slightly. How I was even awake enough to realize it was the sprinklers, I’ll never know. I bolted out of bed, sped to the garage and shut the sprinkler system off as fast as I could. I ran to the back door to see if the tent was wet, although I’m pretty sure the boys would have been inside if it would have. Luckily, one sprinkler had missed them by 3 feet. They never even knew it.

Taking care of boys for a sleepover is a breeze. All you really need is good food and a football or baseball. There’s no drama, no fighting over the bathroom, no fighting over who’s sleeping by who. They just hang.

They’re just little men. Food + sport = happy.

But, that means the food is really important. I can handle that. I just want it to be simple, hearty and good.

Nacho bar. Done.

Nacho Bar with Queso Dip

The centerpiece of my Nacho Bar had to be zesty, creamy, yummy, and easy Queso made with RO*TEL and VELVEETA. It’s always crowd pleaser. (And, with just two ingredients, it makes me happy too!)

For the Nachos bar. I presented

  1. Famous Queso Dip Recipe with RO*TEL and VELVEETA
  2. plenty of chips
  3. jalapenos
  4. sour cream
  5. taco flavored, cooked ground beef
  6. black beans
  7. salsa

This is not as much a recipe as a process. The only thing you’ll really cook for this spread is that Famous Queso Dip Recipe. I chose this Famous Queso Dip Recipe because 1. the boys can make it themselves and 2. everybody likes it!

Two Ingredients for your Queso Dip

It only takes two ingredients to make this wonderful cheese dip recipe. The first ingredient is Velveeta cheese, or you can use another melty cheese, but Velveeta is the traditional cheese. The second ingredient is chopped tomatoes and green chiles, better known simply as ‘rotel tomatoes’ or ‘rotel’.

Ingredients

  • 16 ounces processed cheese like VELVEETA
  • 1 can tomatoes and green chiles like RO*TEL brand

Instructions

  • Cube VELVEETA. This just helps it melt evenly and more quickly.
  • Add VELVEETA and entire can of RO*TEL to a microwave safe bowl.
  • Microwave 3 to 4 minutes, depending on your microwave, stirring every 30 seconds.
  • Heat until VELVEETA is melted completely and smooth.
  • Serve hot with your favorite chips.

Notes

*You may also heat stove top or in a slow cooker. It will take 20 to 25 minutes to melt completely in a slow cooker on low.

    Love, Love, Love the dip! I also add 1/2 tsp of chili powder and 1/2 tsp cumin.

  4. Oooh, one of my alltime favorite foods! And too funny about the sprinkler. Mine always want to sleep in a tent in the yard but they end up coming in as soon as it gets dark.
