News from the Jones household: We have made major changes in our schedule the last week. For the first time since Lincoln was five, he is not swimming on the swim team every day. People! That is like a 1.5 gift of time added to my day. Literally! Lincoln swam for an hour a day four days a week, so by the time I drove him to the pool and waited, it took an hour and a half. We decided he needed a break and time to try other sports. so he’s taking tennis and golf lessons which are only two days a week. He is enjoying the change and the challenge of learning new sports.

Ryder has swum on and off for the last few years but has never been as passionate about it as Lincoln. We enrolled him in tennis. He had his first lesson today. As I was driving him to practice, he was talking non-stop, which is what he does when he’s nervous! So I’m accustomed to it and I just let him talk replying with the occasional ‘huh’ and ‘yeah’. As we were parking he said, “Mommie, I hope there’s just one person here I know. Then I hope I don’t know anybody else and I get to make new friends. I like making new friends!”…. I did laugh out loud! That’s my Ryder, he’s just like his Dad! He could give a flip about what he’s doing as long as there are people around to talk to and socialize with!

He’s like that where ever we go. He’ll make friends with anybody anywhere! Ryder loves to tailgate because there are tons of people to talk to, play with and plenty of pretty girls to look at. Yep, he may only be eight, but he knows a pretty girl when he sees one!

So we tailgate on Saturday for the first time this season and I decided to make a simple dish that’s been one of our favorites for a long time. Sausage and Cheese Cups are so simple and so delicious! Prep these appetizers the day before, makes party prep or tailgating a breeze!

Ingredients

  • 12 ounce package wonton wrappers
  • 1 pound sausage I like mild
  • 3 tablespoons Ranch Dressing seasoning mix not made up dressing
  • 8 ounces Monterey Jack cheese shredded
  • 8 ounces cheddar cheese shredded
  • 1 cup mayonnaise
  • 1 cup milk I used 2% because that's what we always have, you can use whole or 1%

Instructions

  • Spray mini muffin tins with non-stick spray. Press wonton wrappers in the tins carefully so as not to tear. fold edges back and flat to open up the cup.
  • Bake 350 degrees 10 to 12 minutes or until lightly browned. {You can do this ahead of time and store in an air-tight container until ready to fill.}
  • Brown sausage and drain off fat. Cool.
  • In a large bowl, mix Ranch dressing mix, cheeses, mayonnaise, milk and sausage. {You can mix this together the night before, as well, and refrigerate.}
  • Fill wonton cups with sausage mixture.
  • Bake at 350 degrees 10 to 12 minutes or until cheese is melted and wontons are brown. Remove from tin to a wire rack to cool.
