Yeah, it didn’t go so well!! My husband still likes to pick on me about it! I mean, truthfully, I just had his waistline and heart in mind… and my skinny jeans. I think he’d rather go hungry than eat them…..actually, I think he did go hungry that night….
So, sometimes, I just want to do some healthy meals. But, I’ve learned that some recipes you just can’t skinny’ up. But, a good green on green on green salad like this one is a keeper! Pinky Swear!!
Avocado & Edamame Salad
- 4 cup spring mix with baby spinach
- 2 Tablespoons lime juice
- 1 avocado sliced
- 1/4 teaspoon nutritional yeast
- 1/4 teaspoon flax seed
- 1/2 cup edamame
- 1 Tablespoon sliced almonds
- Peel and slice avocado. Squeeze lime juice over cut avocado so prevent them from turning brown. Microwave edamame until hot and soft. For 2 dinner salads, layer half salad greens, avocado, edamame, nutritional yeast, flax seed and almonds in each salad bowl. Top with 2 T salad dressing of your choice.
