This extraordinary dip can be served with toasted bread or crackers. It’s also good with pita, corn, or potato chips.

Sweet Vidalia onions are caramelized then mixed with creamy mayonnaise and seasonings to make this extraordinary savory dip recipe! It’s a whole new level of yum!

Caramelized Vidalia Onion Dip Recipe

  1. How to caramelize onions – Coat the bottom of a large pan with oil. Heat the pan over medium heat until the oil is hot. Add the onion and stir to coat them with the oil. Spread the onions out evenly over the pan and allow to cook slowly. Do not let the pan get too hot, reduce heat if necessary. Stir frequently.
  2. I prefer Vidalia onions, but any sweet onion will work in this recipe.
  3. Cheddar cheese is great. Also, try Swiss or fontina cheese.
  4. I used Sriracha hot sauce, but any hot sauce will work. Use your favorite or what you have on hand.

How to Store Onions

  1. Dry bulb onions should be kept in a cool, dry. Choose a cool, dark place to store your onions. The space should have a temperature maintained between 40 to 50° Fahrenheit or 4 to 10° Celsius.
  2. Onions should be stored in a well-ventilated place. Do not store whole onions in plastic bags. Lack of air movement will reduce their storage life. Keep the storage space dry. Onions easily absorb moisture, and the wetness in the air will rot your produce. The humidity level should be kept at 65 to 70 percent.
  3. Sweet onions have a higher water content than storage onions, making them more susceptible to bruising, and a shorter shelf life than storage varieties. One way to extend the shelf life of a sweet or high water content onion is to wrap each one in paper towels or newspaper and place them in a cool, dry place.
  4. Other options for good ventilation include hanging the onions in mesh baskets, netted bags or pantyhose. If you decide to use pantyhose as a storage option, tie a knot between each bulb. Use the bulbs from the bottom, cutting the onion out below the knot so the onion above it stays secure. You can also use string or twist ties in between the onions to keep them separate.

    Ingredients

    • 2 cups Vidalia onions chopped
    • 1 tablespoon canola oil
    • 2 cups cheddar cheese shredded
    • 1 cup mayonnaise
    • 1 teaspoon sriracha sauce

    Instructions

    • Saute onion in oil until onion is dark caramel color about 20 to 30 minutes.
    • Combine onion, cheese, mayonnaise, and sriracha in a bowl.
    • Stir to combine.
    • Pour into a 1 and 1/2 quart casserole dish.
    • Bake, uncovered at 350 degrees F for 25 to 30 minutes or until hot and bubbly.
    • Serve with tortilla chips, corn chips, or a sturdy cracker
