Sharing Shrimp and Chorizo Quesadilla today!
Have you had chorizo before?
Chorizo is spicy, pork sausage. A lot of Mexican recipes call for chorizo.
I have heard chorizo a lot lately on Food Network. We ate at a local Mexican restaurant
last week and a chorizo dip was on the menu. I ordered it and, oh my goodness, it was awesome.
I set out to find it and use it in a recipe myself.
I finally located a pound at a local specialty grocery store.
I decided to make this shrimp and chorizo quesadillo with it.
My husband loved it. I served it with rice, but next time I’ll do a salad to lighten and brighten it.
Cook chorizo, stirring and breaking up as it cooks
Cook shrimp in the same pan and they’ll absorb some of the sausage flavor
Heat a griddle to medium hi
Layer cheddar cheese, chorizo, shrimp, and 1 T salsa and brown on each side
Shrimp and Chorizo Quesadilla
Servings: 4 servings
- 1 lb chorizo sausage
- 1/2 lb shrimp shelled
- 1 c cheddar cheese
- 1/2 c salsa
- 6 flour tortillas
- Cook sausage and shrimp. Heat griddle to med-hi. Layer chorizo, shrimp, cheese, and 1 T salsa in flour tortilla. Cook until golden brown. Serve with Fish Taco Sauce and salsa.
