Spicy Charred Street Corn {Elote} Dip is the best dip to serve during the Summer months and with Mexican-inspired foods. It’s cheesy and spicy from jalapenos and Tijan seasoning.

This Mexican Street Corn dip is good served hot or cold. It’s also good on tacos, nachos, or over a salad.

SPICY CHARRED STREET CORN {ELOTE} DIP

If you’ve been a follower for a while, you know that I love Mexican Street Corn. I have several recipes.

This is another form of Street Corn Dip and one of my favorite Cinco de Mayo recipes. I also put together three Cinco de Mayo menus for you. You can access them here where you can save them to your personal recipe box.

SPICY CHARRED STREET CORN DIP INGREDIENTS

Ingredient amounts and full recipe is further below where you can save it to your personal recipe box.

  1. Corn. Any variety of corn and you can use frozen or canned.
  2. Jalapeno. Remove the ribs and seeds to make it less spicy.
  3. Butter. You can use salted or unsalted.
  4. Mayo. I prefer Duke’s or Blue Plate.
  5. Cotija. This is a crumbly Mexican cheese.
  6. Cilantro. Fresh
  7. Garlic. I prefer whole garlic cloves.
  8. Lime. Every Mexican dish needs a squeeze of lime!
  9. Cream Cheese. Use full-fat cream cheese. Low fat and fat-free cream cheese won’t melt smoothly.
  10. Seasoning. Tajin, salt, and pepper. Tajin is a brand of Mexican seasoning containing a variety of peppers, lime, and citrus.
  11. Cheddar. Or any cheese you like.

Ingredients

  • 4 tablespoons butter
  • 4 cups corn frozen or canned
  • 1 medium jalapeño seeded and diced
  • 3 tablespoons mayonnaise
  • ½ cup sour cream
  • 4 tablespoons cotija cheese crumbled (like this brand)
  • 2 tablespoons fresh cilantro leaves chopped
  • 1 clove garlic minced, or ¼ tsp garlic powder
  • 1 medium lime juiced
  • 4 ounces cream cheese room temperature
  • ¼ teaspoon Tajin seasoning like this or low sodium Tajin
  • teaspoon each salt and pepper
  • ½ cup cheddar cheese shredded
  • lime juice, tajin, cilantro, and cojita for garnish

Instructions

  • In a mixing bowl, combine sour cream, mayo, lime juice, tajin, chopped cilantro, cojita cheese. Set aside.
  • Add corn and jalapeno to a cast iron skillet in an even layer on high heat. Cook for 3-5 minutes without stirring. The longer you leave it the more char you will achieve.
  • If using fresh garlic, Turn down the heat to medium and add garlic and butter stirring until fragrant and cooked through.
  • Pull off the heat and stir in cream cheese and shredded cheese until melted.
  • To serve warm: add sour cream mixture and stir until combined. Sprinkle with lime juice, tajin, cilantro, and cojita, and serve with chips. Serve immediately.
  • To serve cold: wait until corn mixture cools and add sour cream mixture, stir until combined. Sprinkle with lime juice, tajin, cilantro, and cojita, and serve with chips
