This delicious salad makes a great side salad, lunch, or afternoon snack. This vibrant salad is the perfect mix between sweet and savory. It’s healthy and will add bright summer flavors and freshness to your diet.

  • Romain lettuce, chopped. You may want to substitute a Spring salad mix.
  • peaches, pitted and sliced. You can substitute nectarines.
  • avocados, pitted and sliced
  • blueberries
  • red onion, sliced thinly
  • blue cheese, crumbled, or substitute feta
  • pecans salted and roasted
  • lemon juice
  • fresh mint leaves
  • honey
  • Dijon mustard
  • garlic
  • olive oil
  • salt and pepper to taste

Of course, you can always substitute ingredients you don’t like. Try adding strawberries, corn, cilantro, cucumbers, radishes, or tomatoes.

You can also add and protein and/or grain to make it a main meal. Try adding cooked chicken, black beans, guinoa, couscous, or farro to make the salad heartier.

Tips for the best Summer Peach Salad

  • Prep all the ingredients ahead of time and store them in individual containers in the refrigerator until you’re ready to assemble.
  • Make the salad dressing in advance. It keeps nicely in the refrigerator 4 to 5 days.
  • I recommend you not put the salad dressing on it if you’re don’t plan to eat it immediately.

Ingredients

Peach Salad

  • 5 cups Romain lettuce chopped
  • 3 to 4 medium peaches pitted and sliced
  • 2 medium avocados pitted and sliced
  • 1 cup blueberries
  • ½ cup red onion sliced thinly
  • ½ cup blue cheese crumbled, or substitute feta
  • 1 cup pecans salted and roasted

Mint Salad Dressing

  • ½ cup freshly squeezed lemon juice
  • ¼ cup fresh mint leaves
  • 3 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon minced garlic
  • ½ cup olive oil
  • salt and pepper to taste

Instructions

  • Arrange the salad ingredients into individual bowls or in a large serving bowl.
  • To prepare the dressing: Place the lemon juice, mint leaves, honey, mustard, and garlic into a food processor. Pulse until the ingredients are pureed. Add the olive oil and process until the dressing is well blended and the mint is fine. Adjust the taste with salt and black pepper. Process again to mix.
  • Serve the salad with the dressing.
