1avocado
1/2cupplainfat-free Greek yogurt
1clovegarlic minced
2teaspoonfresh lime juice
1/2teaspoonfreshly ground black pepper
2 to 4tablespooncrumbled blue cheese
Instructions
Roast vegetables at 450 25 to 30 minutes.
Peel, seed, and mash an avocado.
Stir avocado with yogurt, garlic, lime juice, and black pepper.
Fold in crumbled blue cheese.
Refrigerate until ready to serve.
