Unwrap the candy canes and place them in a freezer ziptop bag and crush using a rolling pin or meat mallet.
Place a sheet of waxed paper or parchment paper on the counter.
Place the white chocolate (or almond bark) in a medium microwave-safe bowl. Microwave at 30-second increments stirring each time until the chocolate is melted and smooth.
Put the Chex cereal in a large bowl. Pour melted chocolate over cereal and carefully stir with a large spatula until the cereal is coated.
Pour onto waxed paper and spread out some. (Work quickly)
Sprinkle crushed peppermint over the chocolate-covered cereal before it cools.
Allow the chocolate to cool and harden.
Store in an airtight container. It should stay fresh for 5 to 6 days.
