Roasted Garlic Hummus

Roasted Garlic Hummus a simple hummus recipe. Roasting garlic brings out a complex flavor, when paired with ground red pepper makes this hummus have a unique flavor profile.

Ingredients

  • 2 15 ounce cans chickpeas drained
  • 1 small head garlic about 1/4 cup garlic cloves
  • 2 tablespoons tahini
  • 1 teaspoon salt
  • 1/2 teaspoon ground red pepper
  • 1/3 cup water
  • 2 to 3 tablespoon good olive oil

Instructions

  • Wrap garlic in aluminum foil. Bake in 400° oven for 30 to 40 minutes or until soft.
  • Drain garbanzo beans. Spread on a towel and using another towel on top, lightly rub. This will loosen the outer hull. Pick hulls out and discard.
  • Add beans, garlic, tahini, salt, and pepper to a food processor.
  • Pulse 8 to 10 times to process beans.
  • With processor on low, drizzle in water then olive oil until smooth. Taste and adjust seasonings to your liking.
