Lemon and Herb Vinaigrette

  • 1/4 c good olive oil
  • zest of one lemon
  • juice of one lemon
  • 2 tsp Dijon mustard
  • 2 garlic cloves minced
  • 1/2 tsp sugar
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp dried thyme
  • 1/8 tsp ground black pepper


  • In a canning jar, measure and pour all ingredients. Cap tightly and shake vigorously 30 seconds. Pour over salad greens.
  • *This is a good recipe to have kids help with. No knives involved. And, my boys love to shake, shake, shake the jar!
