Balsamic Pork Loin/ Pesto Pork Wrap

  • 2 lb pork LOIN not tenderloin*
  • 2 14.5 oz can diced tomatoes
  • 1 medium onion thinly sliced Not chopped
  • 4 garlic cloves
  • 1/2 cup balsamic vinegar
  • 1 Tablespoon olive oil
  • 1 teaspoon each: dried oregano basil, and rosemary
  • 1/2 teaspoon thyme
  • ground black pepper and salt to taste


  • Place pork in slow cooker. Layer with onion, garlic then herbs, pour tomatoes then balsamic vinegar over all ingredients. Cook 4 hours on low.
  • Serve over rice or angel hair pasta and/or with side salad
