Unwrap the caramel and using clean hands smush the caramel into a circle the size of your cookie.
Next, melt the chocolate candy melts in the microwave in 30-second increments.
Stir at each interval until the chocolate is melted and smooth. Pour the chocolate into a decorated bag or a freezer zip-top bag. Snip the end off.
Pipe chocolate onto the flat side of two cookies.
Sandwich the flattened caramel between the cookies and press lightly together. Sit it on parchment or wax paper to dry.
Continue with the next cookie.
Notes
You can make as many as you want and save the remaining ingredients for another time. I made about 15 cookies. I don't know how many the whole box of cookies make.
According to my crafty internet searching skills, I think they're 88 wafers to an 11-ounce box. So that would be 44 cookies. (You'll probably need 2 bags of caramels if you plan to make all.)
