One Pan Spinach Cheese and Fire Roasted Tomato Pasta is comfort food at it's best. It's creamy, spicy and ready from pan to plate in less than 30 minutes.

  • 1/4 cup basil pesto
  • 1 tablespoon minced garlic
  • 24 ounce can diced fire roasted tomatoes, undrained
  • 1/2 cup enchilada sauce
  • 2 tablespoon balsamic vinegar
  • 1/2 cup heavy cream
  • 1 to 2 cups fresh spinach
  • 1 cup cherry tomatoes
  • 1/4 teaspoon salt or to taste
  • 12 ounce Barilla® Pronto™ pasta
  • 4-6 ounces ricotta cheese
  • 1/2 cup shredded parmesan cheese


  1. Heat oven to 375.
  2. In a large skillet on the stove top, cook pasta according to package directions.
  3. When water is boiled out, add pesto, garlic, tomatoes, enchilada sauce, and balsamic vinegar to the pasta. Stir to combine.
  4. Add salt and pepper and taste. adjust seasoning.
  5. Stir in spinach, tomatoes, and heavy cream
  6. Dollop ricotta in pasta.
  7. Sprinkle parmesan cheese over pasta
  8. Bake in 375 degree oven until ricotta and parmesan have melted about 15 minutes
  9. Serve hot.
