Lighter Rotisserie Chicken Salad with Sriracha Almonds

Ingredients

  • 2 cups chopped cooked chicken cooked and cooled*
  • 1 granny smith or gala apple peeled, cored and diced
  • 1/2 cup seedless red or green grapes
  • 1/4 cup Sriracha Blue Diamond Almonds coarsely chopped
  • 1/4 cup olive oil mayonnaise
  • 1/4 cup fat free Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon lemon juice
  • salt and pepper to taste

Instructions

  1. Mix together mayonnaise, yogurt, mustrad, vinegar, and lemon juice.
  2. Fold in the chicken, apple, grapes and almonds being careful not to break up the chicken too much.
  3. Serve as a dip, in a sandwich or on lettuce or endive leaves.

I used a rotisserie chicken
