Cranberry Brie Bites

  • 3 sheets phyllo dough
  • 2 oz brie cubed
  • 4 T dried cranberries
  • 2 T Cointreau
  • 4 T toasted pecans
  • 4 T honey


  • Pour Cointreau over cranberries in a small bowl and allow to sit about an hour to re-hydrate.
  • Preheat oven to 350 degrees. Heat a small sauce pan on medium and toast pecans until lightly browned a fragrant. Spray mini muffin tin with non-stick spray. Layer 3 sheets of phyllo dough on top of each other. Cut dough into approximate 3 inch squares using a pizza cutter. You should get 12 squares from the 3 stacked sheets. Press dough into tins. Put cube of brie in each cup. Top with about 1/2 tsp each of the cranberries, pecans and honey. Bake until dough is golden brown and cheese is melted about 12 to 15 minutes. Cool slightly before serving.
