Avocado & Edamame Salad

  • 4 c spring mix with baby spinach
  • 2 T lime juice
  • 1 avocado sliced
  • 1/4 tsp nutritional yeast
  • 1/4 tsp flax seed
  • 1/2 c edamame
  • 1 T sliced almonds


  • Peel and slice avocado. Squeeze lime juice over cut avocado so prevent them from turning brown. Microwave edamame until hot and soft. For 2 dinner salads, layer half salad greens, avocado, edamame, nutritional yeast, flax seed and almonds in each salad bowl. Top with 2 T salad dressing of your choice.
