Citrus fruit is great to use during the winter months. I added mushrooms and peppers along with fresh fruits to my recipe then topped it with honey and poppy seed dressing.
1small red onionsliced thinly and separated into rings
⅓cuphoney
¼cupcider vinegar
2Tablespoonspoppy seeds
2 teaspoonsoniongrated
2teaspoonslemon juice
1teaspoonssalt
1teaspoonground mustard
½teaspoonlemon peelgrated
4cupssalad greenstorn
2cupsmushroomsfresh, sliced
Instructions
In a bowl, combine grapefruit and orange sections. Sprinkle with sugar. Add red pepper and red onion and toss.
In a blender, combine the honey, vinegar, poppy seeds, grated onion, lemon juice, salt, mustard and lemon peel; cover and process until blended. Pour over fruit mixture and toss to coat.
In a serving bowl, toss greens & mushrooms. Arrange fruit mixture on top of greens. Serve immediately.
