Leftover Loaded Mashed Potato Pancakes

This recipe is a great way to use leftover mashed potatoes. Leftover Loaded Mashed Potato Pancakes have great flavor from the bacon. They are fluffy on the inside and crispy on the outside.

Ingredients

  • 3 slices bacon cooked and chopped
  • 3 cups cold leftover mashed potatoes
  • 2 eggs
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt adjust to your taste
  • 1/2 teaspoon pepper
  • 1 and 1/2 cup shredded cheddar cheese
  • 1 cup panko breadcrumbs

Instructions

  1. Cook the bacon, remove, chop, and reserve drippings.
  2. Mix the mashed potatoes, eggs, onion powder, garlic powder, salt, and pepper together in a bowl.
  3. Stir in the bacon and cheese
  4. Form the mixture into 8 patties.
  5. Coat the patties in panko.
  6. Heat the bacon drippings over medium heat and pan-fry the patties about 4 minutes per side. 
  7. Remove and drain on a paper towel.
  8. Serve immediately.
