Keto Broccoli Cheese Casserole

- 1 large head broccoli about 6 cups
- 1/2 cup pork rinds crushed
- 8 ounces cream cheese
- 1/4 cup butter
- 1 cup almond milk
- 2 cups mozzarella cheese shredded
- 1/4 cup water more or less to thin sauce
Preheat oven to 350. Wash broccoli and cut into bite-sized pieces. Spray a 9x9-inch baking pan with non-stick spray.
Boil broccoli until tender-crisp. Blanch to stop the cooking process. Drain and pour into prepared cooking dish.
Ia saucepan on medium-low, melt butter and cream cheese. Whisk until smooth.
Add milk and cheese and whisk until smooth. Whisk in water if needed.
Pour over broccoli in the baking pan. Top with crush pork rinds.
Bake at 350°F until hot and bubbly about 20 minutes.
