Keto Broccoli Cheese Casserole

I made this recipe using my base recipe Low Carb Cheese Sauce. This sauce elevates anything you put it on. So good!

Now, some people don’t really watch what they eat during the holidays. I do. I don’t diet, but I always try to eat sensibly. This makes a lovely side dish for Thanksgiving and Christmas. It’s a great substitution for Broccoli Rice Casserole if you’re watching carb intake.

The way you cook your broccoli is a personal thing and this recipe is really forgiving. I like softer cooked broccoli. Therefore, I like to blanch it before adding to the cream sauce.

What is blanching?

Blanching is a cooking process wherein a food, usually a vegetable or fruit, is scalded in boiling water, removed after a brief, timed interval, and finally plunged into iced water or placed under cold running water to halt the cooking process. Blanching foods helps reduce quality loss over time

Blanch your broccoli to the degree of doneness that you prefer. However, remember that it will cook more in the oven.

Ingredients

  • 1 large head broccoli about 6 cups
  • 1/2 cup pork rinds crushed
  • 8 ounces cream cheese
  • 1/4 cup butter
  • 1 cup almond milk
  • 2 cups mozzarella cheese shredded
  • 1/4 cup water more or less to thin sauce

Instructions

  • Preheat oven to 350. Wash broccoli and cut into bite-sized pieces. Spray a 9×9-inch baking pan with non-stick spray.
  • Boil broccoli until tender-crisp. Blanch to stop the cooking process. Drain and pour into prepared cooking dish.
  • Ia saucepan on medium-low, melt butter and cream cheese. Whisk until smooth.
  • Add milk and cheese and whisk until smooth. Whisk in water if needed.
  • Pour over broccoli in the baking pan. Top with crush pork rinds.
  • Bake at 350°F until hot and bubbly about 20 minutes.
  • Serve warm.

    Hi! Just came across this recipe for Keto Broccoli Cheese Casserole. Would love to try it. I have questions. Can I use frozen broccoli instead of fresh? I f so, would I need to blanch it? What can I use instead of pork finds?

      Yes, you can use frozen and I would blanch it first.
      Panko breadcrumbs, Coconut flour, Almond meal/flour or substitutes for breadcrumbs in the Keto diet.
      Or, omit them.
