Creole 15 Bean Soup with Sausage and Ham is a spicy, comforting meal with Creole seasoned beans simmered slowly in a pot with sausage & ham.. Much like classic Cajun red beans and rice, this hearty recipe uses a 15 bean blend.
CREOLE 15 BEAN SOUP WITH SAUSAGE AND HAM
Although this recipe takes a few hours to cook, it’s surprisingly simple with little hands-on time. Additionally, when you use the 15 bean blend you don’t have to soak the beans beforehand.
This is a great recipe for game day or for a crowd. It’s hearty, easy, and budget-friendly. You can make it ahead of time and reheat it.
If you strive for a low-carb diet, you can totally enjoy this without rice.
WHAT IS ANDOUILLE SAUSAGE?
Andouille Sausage is a coarse-grained smoked sausage made using pork, garlic, pepper, onions, wine, and seasonings. Once the casing is stuffed, the sausage is smoked again (double smoked). It has a coarse, smoky, and sharp taste and in the U.S. is most associated with Louisiana Cajun cuisine although it originated in France.
CAN I MAKE 15 BEAN SOUP IN A SLOW-COOKER?
Yes! Absolutely! Here’s the slow cooker method. The measurements are the same as below in the recipe card.
- Rinse the beans and discard any debris. Drain then pour the beans in a slow cooker with 6 cups of stock, onions, garlic, steak sauce, paprika, bbq seasoning, bay leaf, sausage, ham, and ham bone. (You can use 9-10 cups of stock if you like a more brothy soup.)
- Stir to combine. Set slow cooker on high and cook for 4 to 6 hours then check to make sure beans are tender. If they’re not tender you can continue with the slow cooker on high for another hour. If they are tender, you can turn the slow cooker off and serve. Furthermore, you can allow the soup to simmer for several hours. It will develop more flavor over time.

- 20 ounce bag 15 bean blend
- 1 small onion diced
- ½ tablespoon garlic minced
- 1 tablespoon steak sauce I use this brand but you can use any
- 1 teaspoon paprika
- 1 teaspoon barbecue seasoning I use this, but any rub you put on ribs
- 6 cup low-sodium chicken stock
- 2 whole bay leaves
- 1 - 2 pound andouille sausage or smoked sausage, sliced
- 1 pound ham cubed. I used a ham steak. I diced the meat but put the bone in the soup until ready to serve.
- 2 cups rice
Instructions
- In a colander or sieve, rinse the beans thoroughly. Sort and inspect for any unwanted debris and discard.
- Add the beans, seasoning pack (that comes in the package of beans, onion, garlic, steak sauce, paprika, bbq seasoning, chicken stock, and bay leaves to a large Dutch oven or pot. Bring it to a low boil, then reduce the heat so that the beans are at a simmer. Place the lid on the pot and simmer for 3 hours.
- Add the sausage and ham, cover, and cook another 2 hours on simmer. (If you want the sauce thicker, you can uncover and cook the last hour.)
- Turn the heat off and allow the beans to rest and cool while you cook the rice.
- Cook the rice according to packages instructions.
- Serve over rice in a bowl.
