In a colander or sieve, rinse the beans thoroughly. Sort and inspect for any unwanted debris and discard.
Add the beans, seasoning pack (that comes in the package of beans, onion, garlic, steak sauce, paprika, bbq seasoning, chicken stock, and bay leaves to a large Dutch oven or pot. Bring it to a low boil, then reduce the heat so that the beans are at a simmer. Place the lid on the pot and simmer for 3 hours.
Add the sausage and ham, cover, and cook another 2 hours on simmer. (If you want the sauce thicker, you can uncover and cook the last hour.)
Turn the heat off and allow the beans to rest and cool while you cook the rice.
