Chipotle Sauce
¼cupmayonnaiseI use olive oil mayonnaise
½mediumlimezested and juiced
½tablespoonchipotle peppers in adobe saucefrom jar
½teaspoongarlicsmashed
½cup, uncookedquinoacooked, or rice
avocado and cilantroto serve
Instructions
Preheat the oven to 425° F.
On a large baking sheet, toss together the sweet potatoes and onions with 2 tablespoons of olive oil, garlic, paprika, cumin, chili powder, salt, and pepper.
Bake for 25 minutes.
Meanwhile, cook the quinoa or rice.
To serve, add quinoa to a bowl and top with sweet potato hash, avocado slices, cilantro, and chipotle sauce. Serve immediately.
