Cut the chicken into long strips, then skewer onto your wood skewer. Combine the rest of the ingredients in a bowl and whisk until smooth.
Add the sauce to a large saucepan on medium heat. Bring it to a simmer, then lower the heat. Cook at a simmer for 10 minutes or until the sauce coats the back of a spoon.
Add the skewers and turn in the sauce to coat.
