Buffalo Cauliflower Lettuce Wraps
These lettuce wraps feature crispy baked cauliflower coated in tangy buffalo sauce, served in fresh lettuce cups for a light yet flavor-packed bite. Perfect for lunch, dinner, or a fun appetizer.

Ingredients

cauliflower
cut into bite-size florets (about 4 cups | 17.6 oz | 500 g)

olive oil

garlic powder
Salt to taste

buffalo wing sauce
6 fl. oz | 180 ml

lettuce leaves
like romaine or butter lettuce

carrots
shredded , 1.76 oz | 50 g
Optional: vegan ranch or yogurtdressing, for drizzling
Instructions
Roast the Cauliflower
Preheat the oven to 425°F (220°C).
Toss cauliflower with olive oil, garlic powder and a pinch of salt.
Spread on a baking sheet and roast for 20 minutes, turning halfway through.
Add the Buffalo Sauce
Remove cauliflower from the oven, toss with buffalo sauce and return to the oven for 5 more minutes to caramelize slightly.
Assemble the Wraps
Lay out lettuce leaves. Fill each with a spoonful of buffalo cauliflower and shredded carrots.
Drizzle with dressing if desired.
Serve
Serve immediately while cauliflower is hot and crisp.
