Cajun shrimp: Drain and pat dry shrimp with kitchen paper. Add in a bowl and season with salt, pepper and cajun seasoning. Heat a non-stick skillet with oil on medium heat and sear shrimp on both sides until pink. It will take about 2 minutes each side. Switch off the heat
Mandarin salad: In a large salad bowl, add all the ingredients and top with the shrimps.
Honey Mustard Dressing: In a small bowl, combine all the ingredients and pour in the salad bowl just before serving. Toss.
