Creamy Mexican Kale Slaw
Fresh, vibrant, and healthy, Creamy Mexican Kale Slaw is great as a side or piled high on your tacos. This slaw is loaded with flavor and satisfying!
Servings 10 servings
- 12 -ounce bag kale slaw
- 15 -ounce can black beans rinsed and drained
- 11 -ounce can shoe-peg corn drained
- 1/2 cup cilantro fresh, chopped
- 1 medium jalapeno de-seeded and minced
For the sauce
- 3/4 cup mayonnaise can use olive oil mayo
- 1/4 cup Greek yogurt
- 2 tablespoons taco seasoning
- 2 tablespoons lime juice fresh
In a small bowl combine all the sauce ingredients and whisk until smooth.
In a large bowl, add slaw, black beans, corn, cilantro, and jalapeno. Add sauce and stir to combine.
Serve immediately or refrigerate. Store in an airtight container in the refrigerator up to 3 days.
