Coconut Mojito

Coconut Mojito {for a crowd}

Simple syrup:

  • 1/2 cup water
  • 3/4 cup sugar
  • Cocktail
  • 8 oz coconut milk
  • 3 cup coconut flavored rum
  • Simple syrup
  • 4 limes
  • 1 8 oz bottle club soda
  • mint leaves from about 4 stalks (or 30ish leaves)


  • Boil sugar and water 3 minutes. Set aside.
  • In a pitcher, muddle mint leaves and limes quarters. Add coconut milk, rum, and simple syrup. Stir. Add club soda; stir. Serve over ice w/ a garnish of mint and lime.
