Chicken and Shrimp Fajita Nachos

  • 4 or 5 chicken tenders or 2 chicken breasts
  • 1 c shrimp 1/2 lb
  • 1 pkg fajita seasoning
  • tortilla chips
  • 1 c peppers I used yellow and red, sliced
  • 1 c onion I used red and a sweet onion, sliced
  • Cheese 1 c Velveeta, melted or 1 c cheddar grated
  • 1/4 c feta cheese crumbled
  • Sriracha sauce optional


  • Season chicken, shrimp, and sliced vegetables with fajita seasoning. Saute' chicken a couple minutes on med hi or until done and remove to platter. Saute' vegetables 3 to 4 minutes or to desired doneness, remove to platter. Heat chips in oven. Saute' shrimp 1 to 1/2 minutes, remove to platter. Remove chips from oven. Layer chicken, vegetables, shrimp then cheese on top of chips. Add a few drops of Sriracha sauce if desired. Serve immediately.
