Meanwhile, I’ve been on a nacho kick lately. Today I present to you Chicken and Shrimp Fajita Nachos.
I used 5 chicken tenders and about a cup of shrimp
with packaged Fajita seasoning
Just sprinkle fajita seasoning over everything
Slice peppers and onions
Sprinkle fajita seasoning over all
I decided to slice the chicken before cooking.
Cook about a minute then turn and cook another minute (or so)
Remove chicken and cook vegetables
When vegetables are almost done, heat chips in oven
Layer chicken, vegetables and
shrimp over chips
Add cheese
I like creamy cheese, so I melted Velveeta
You could sprinkle grated cheddar over and broil in oven to melt
Then I added some crumbled feta and hot sauce

Chicken and Shrimp Fajita Nachos
Ingredients
- 4 or 5 chicken tenders or 2 chicken breasts
- 1 c shrimp 1/2 lb
- 1 pkg fajita seasoning
- tortilla chips
- 1 c peppers I used yellow and red, sliced
- 1 c onion I used red and a sweet onion, sliced
- Cheese 1 c Velveeta, melted or 1 c cheddar grated
- 1/4 c feta cheese crumbled
- Sriracha sauce optional
Instructions
- Season chicken, shrimp, and sliced vegetables with fajita seasoning. Saute' chicken a couple minutes on med hi or until done and remove to platter. Saute' vegetables 3 to 4 minutes or to desired doneness, remove to platter. Heat chips in oven. Saute' shrimp 1 to 1/2 minutes, remove to platter. Remove chips from oven. Layer chicken, vegetables, shrimp then cheese on top of chips. Add a few drops of Sriracha sauce if desired. Serve immediately.
