Wash and dry tomatoes. Remove the stems and seeds, then dice the tomatoes. Place on paper towels to drain for up to 10 minutes. (Sometimes I'm in a hurry and don't drain them for 10 minutes, but the salad is really better if you can drain some of the tomato juice out.)
Add the tomatoes, salt, pepper, and Italian seasoning to a medium bowl. (The Italian seasoning is optional. Honestly, sometimes I add it and sometimes I don't. You can also stir in fresh basil instead of the Italian seasoning.)
Stir in the lightly crushed Cheez-Its. Taste and add more salt and pepper, if needed. Serve immediately.
