Instructions
Prepare the Chicken: Preheat your oven to 200°C (400°F). Place chicken breasts between two sheets of plastic wrap and pound them to an even thickness, about ½-inch (1.3 cm) thick. Season both sides with salt and pepper.
2 medium chicken breasts, Salt and pepper to taste
Coat the Chicken: Place the flour in a shallow dish, the beaten eggs in another, and the breadcrumbs and Parmesan in a third. Dredge each chicken breast in the flour, shaking off the excess, then dip in the egg, and finally coat with the breadcrumb mixture, pressing down to ensure it sticks.
1 cup all-purpose flour, 2 large eggs, 1 cup breadcrumbs, ½ cup grated Parmesan cheese
Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 3-4 minutes on each side, until golden brown and crispy. Transfer the cooked chicken to a baking dish.
2 tablespoons olive oil
Bake with Sauce and Cheese: Spoon marinara sauce over each chicken breast, then sprinkle with shredded mozzarella. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through.
½ cup marinara sauce, 1 cup mozzarella cheese
Serve: Garnish with fresh basil if desired and serve hot. For a complete meal, serve over spaghetti or your favorite pasta.
