Spray a 7x11-inch casserole dish with non-stick spray.
Any leftover chicken, whether grilled, baked, or broiled, is good for this recipe. I like to use a rotisserie.
Set aside ½ cup of the cheddar cheese. In a large bowl, mix all the ingredients: chicken, cream of chicken, sour cream, Ritz crackers, cheddar, salt, pepper, and garlic powder.
3 cups chicken, 1 can cream of chicken, 1 cup sour cream, 1 sleeve Ritz crackers, 1 and ½ cup cheddar, ¼ teaspoon salt, ¼ teaspoon black pepper, ½ teaspoon garlic powder
Spoon it into a 7x11-inch casserole dish. Bake at 350° for 30 minutes. Remove from the oven and spread the remaining ½ cup of cheddar over the top. Return to the oven and bake until the cheese is melted.
Remove the dish from the oven and let it cool for 5 to 10 minutes before serving.
Notes
Note: Dolly Parton's original casserole does not contain salt, pepper, or garlic in it. However, after testing it, I decided it's better with these ingredients added. This is the only change I made to the recipe.
