Lazy skillet lasagna is a one-pan version of traditional lasagna where broken lasagna noodles cook directly in meat sauce instead of being layered and baked in a casserole dish - no layering, no boiling noodles, perfect for weeknights.
In a 10-12 inch skillet over medium-high heat, cook the ground beef and sausage, breaking it up with a wooden spoon as you go.
½ pound ground beef, ½ pound Italian sausage
Once the ground meat is no longer pink, drain any excess grease and return to the skillet.
Reduce the heat to medium and add the minced garlic. Cook for another minute or until the garlic is fragrant.

Add the broken lasagna noodles, pasta sauce, water, and Italian seasoning to the skillet. Stir to combine.
9 full-size lasagna noodles, 23.75 to 24 ounces pasta sauce, 1 and ½ cups water, ½ teaspoon Italian seasoning
Cover the skillet with a lid and let the sauce come to a low boil.
Reduce the heat to medium-low and allow the lasagna to simmer for about 30 to 35 minutes. Stir often to keep the noodles from sticking.
You can add up to ½ cup of water, tomato juice, or tomato sauce if the lasagna becomes too thick or begins to dry out
In a small bowl, stir together the ricotta cheese, shredded parmesan, kosher salt and black pepper.
1 cup ricotta cheese, ⅓ cup parmesan cheese, ½ teaspoon salt, ½ teaspoon black pepper
Once the noodles have softened and the sauce has reduced, drop spoonfuls of the cheese mixture on top of the lasagna.
Sprinkle the shredded mozzarella over the top of the cheese mixture.

Reduce the heat to low, cover the skillet until the cheese is melted and bubbly.
This may take 5+ minutes
Garnish with the minced fresh basil. Serve while hot.

Notes
Store-bought pre-shredded parmesan and mozzarella cheese can be substituted for freshly shredded cheese. Pre-shredded cheese is coated with cellulose and is not as creamy as freshly shredded cheese.
You can substitute fresh chopped parsley for the minced basil.
1 pound of sweet Italian sausage can be substituted for the ½ pound beef and ½ pound sweet Italian sausage.
