Heat grill to medium-high. Allow chops to come to room temperature for 30 minutes before grilling.
Sprinkle chops evenly with salt and pepper to taste.
Combine your marinade ingredients of choice. So either Marinade 1, Worcestershire, garlic, & olive oilMarinade 2, Gulden's mustard & orange marmalade ORMarinade 3, Buffalo wing sauce Combine one marinade and brush on chops. Place in a ziptop bag, seal, and allow them to marinate from 1 to 3 hours.
Grill, covered with grill lid, over medium heat (400°F) for 3 minutes, then turn a quarter turn and cook another 3 minutes, then repeat on the other side, or until a meat thermometer inserted into the thickest portion registers 145°F (temperature should rise another 5 to 10 degrees while resting).
Remove from grill, and allow to rest 5 to 10 minutes before serving.
