Slice potatoes evenly, about ⅛ inch thick. (The secret is thin slices. The best tool for thin, even slices is a mandolin.) Try to get them all the same thickness so they'll cook at the same rate.
3 lbs sweet potatoes
Add sugar and water to a medium sized sauce pan.
1 and ½ cups water, 1 and ½ cups granulated sugar
Heat on medium high until sugar is dissolved.
Add sliced sweet potatoes and salt to water.
¼ to ½ teaspoon ground cinnamon, pinch salt
Cook on stove top at a simmer for 30 minutes or until potatoes are soft and water has thickened. Your water should be thick like a maple or corn syrup.
Add butter and stir until butter melts.

Add as much or as little cinnamon as you want. It's actually an optional ingredient. My mom doesn't add any cinnamon but I like a little cinnamon flavor with sweet potatoes.You can also add a pinch of nutmeg if you like it.
