Ingredients

Salad

1 small cabbage diced
3 small cucumbers diced
4 medium green onions sliced
3 cups kale finely chopped
2 cups quinoa cooked

Dressing

¼ cup fresh lemon juice
¼ cup olive oil
2 tablespoons red wine vinegar
2 cloves garlic clove
1 small shallot
½ cup basil
½ cup fresh parsley
½ cup fresh dill
1 cup spinach
⅓ cup pumpkin seeds optional
1 teaspoon salt

Instructions

Wash your vegetables and chop them finely. Add everything to a large salad bowl.
In the blender add the dressing ingredients. Blend until smooth.
Pour the dressing over the salad and mix well to combine everything
