GREEN GODDESS CHOPPED SALAD

It’s crazy to me how some recipes take off and go viral on social media. So a version of this recipe went wild on TikTok. I’m not even on TikTok but it crossed over to other social media platforms. It’s understandable why it caught everyone’s attention, all that healthy green is hard to pass over. I absolutely love Green Goddess Salad Dressing. Therefore, I knew I’d love this salad. As well, there’s just something about a chopped salad that I love!

I added quinoa to the salad making it more hearty. Therefore, it can be served as a main meal or side dish.

As well, this salad dressing is yummy served as a dip with vegetable sticks and chips.

Additionally, this recipe is dairy-free and nut-free, perfect for people with allergies or on a restricted diet.

  • Cabbage
  • Cucumbers
  • Green onions
  • Kale
  • Quinoa
  •  Lemon juice
  • Olive oil
  • Red vinegar
  • Garlic
  • Shallot
  • Basil

  • Dill
  • Spinach
  • Pumpkin seeds
  • Salt
  • You could also add fresh peas, broccoli, edamame, zucchini, avocado, or microgreens.

HOW DO I STORE GREEN GODDESS CHOPPED SALAD?

You can keep the salad in the fridge in an airtight container for up to 3 days. If you want to add avocados, I recommend adding them just before serving.

Ingredients

Salad

  • 1 small cabbage diced
  • 3 small cucumbers diced
  • 4 medium green onions sliced
  • 3 cups kale finely chopped
  • 2 cups quinoa cooked

Dressing

  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic
  • 1 small shallot
  • ½ cup fresh basil
  • ½ cup fresh parsley
  • ½ cup fresh dill
  • 1 cup spinach
  • ⅓ cup pumpkin seeds optional
  • 1 teaspoon salt

Instructions

  • Wash your vegetables and chop them finely. Add everything to a large salad bowl.
  • In the blender add the dressing ingredients. Blend until smooth.
  •  Pour the dressing over the salad and mix well to combine everything
  • You can serve it immediately, or, if you wait for 1 hour, the flavor will have developed, and it will be even more flavorful.
