Crinkle cookies get the name from their appearance. They appear to have cracks in the surface. The dough is rolled into balls and then rolled in powdered sugar. When the cookies are baked, they expand causing crinkles, or cracks, in the powdered sugar.

Ingredients you’ll need for Lemon Crinkle Cookies

  • Lemon cake mix
  • 2 large eggs or equivalent
  • Vegetable oil
  • Lemon. This is optional. The zest adds great flavor, but you can leave it out.
  • Powdered sugar

  • Hand mixer, stand mixer, or wood spoon to mix by hand
  • Spring-release scoop (that holds 2 tablespoons)
  • Sheet pan or cookie sheet
  • Parchment paper or Silpat mat (silicone mat)
  • Mixing bowl
  • 1/3 cup measuring cup
  • 1/2 cup measuring cup

How do I know when Crinkle Cookies are done?

I recommend cooking them for the shortest amount of time recommended. At that time if cookies are cracked, carefully open the oven and test the edge of one cookie with a spatula. If it’s firm and appears ‘set’ and the center of the cookie appears ‘dry’ (not glossy). They will firm and set more as they cool.

Can I use butter instead of oil?

Yes, you can use any nuetral oil or melted butter.

Can I use other flavors of cake mix?

Yes, absolutely. You can use the same ingredients omiting the lemon zest with any flavor cake mix.

How do I store Crinkle cookies?

Store your cookies in an airtight container. As well, you can also freeze the cooked cookies. Allow them to sit out and thaw 2 to 3 hours before serving.

Ingredients

  • 2 large eggs
  • cup vegetable oil
  • 15.25 ounce box lemon cake mix
  • 1 medium lemon zested, optional
  • ½ cup powdered sugar sifted

Instructions

  • Preheat oven to 375℉. Line 2 baking sheets with parchment paper or Silpat mats.
  • In a large bowl, mix together the eggs, oil, cake mix, and lemon zest until combined.
  • Place the powdered sugar in a shallow bowl. Use a mini spring-release scoop (equivalent to 2 tablespoons) to scoop out cookie dough and roll the cookie dough into powdered sugar until evenly coated.
  • Place on your prepared cookie sheet and bake for 7-9 minutes.
  • Let the cookies cool for 2 minutes on the cookie sheet before transferring them to a cooling rack to cool completely.
