Prebake your pie crust in a 350°F oven for 7 minutes.
1 pie crust
In a large skillet, saute Vidalia onions in 2 tablespoons of butter until soft and clear. Remove from the skillet and drain them on a paper towel-lined tray.
2 cups Vidalia onion, 2 tablespoons butter
While the onions are draining, beat milk, eggs, salt, cayenne pepper, and black pepper together.
¾ cup whole milk, 2 large eggs, ¾ teaspoon salt, ⅛ teaspoon cayenne pepper, ⅛ teaspoon black pepper
Place the onions in the pie crust and pour the milk/egg mixture over the onions. Top with shredded cheese.
⅓ cup cheddar cheese, ⅓ cup Monterey Jack cheese
