WHAT IS A ‘BUBBLE UP’?

Recipe bloggers have deemed a ‘Bubble Up’ as a recipe in which biscuit pieces, most often canned biscuits, are used as the base with protein, maybe vegetables, and a sauce poured on top. As the casserole cooks, the biscuits ‘bubble up’ and turn golden brown. Bubble Up recipes can be sweet or savory. They are popular because they’re quick and easy. You can have a tasty bread based recipe without making a dough.

Sausage Gravy Biscuit Bubble Up Casserole

This savory breakfast casserole has your favorite breakfast foods in one convenient casserole. It has biscuits, sausage, gravy, and eggs in it.

My family loves breakfast for dinner. With this recipe being so easy to make, it was a no-brainer for our busy weeknights.

CAN THIS CASSEROLE BE MADE IN A SLOW COOKER?

  1. Assemble the casserole as indicated below, however, layer the ingredients in a slow cooker.
  2. Because the steam releases as the casserole cooks, condensation will collect on the lid. Cover the top with a double layer paper towels before covering with the lid to prevent the casserole from becoming soggy.
  3. Cook on high power. It takes about 2 hours on high. However, you’ll want to check it after about an hour and a half. Not all slow cookers cook the same. Therefore, you want to keep an eye on it the first time you bake it. It’s done when the biscuits are golden brown around the edges and it’s ‘set’ (not jiggly) in the center.

Sausage Gravy Biscuit Bubble Up Casserole

  1. Depending on the variety of sausage and cheese you use will affect how much salt and pepper you need. I find that some brands of sausage and cheddar cheese are saltier than others. I used a pinch of salt and about 1/8 teaspoon of pepper.
  2. As well, I recommend regular pork sausage not maple or sage sausage for this recipe.
  3. You can also use turkey sausage.
  4. I used cheddar, but you can use your favorite cheese or whatever you have on hand.
  5. Finally, only 2 cups of the gravy go into the casserole. Reserve the remaining to serve with the casserole. You can microwave it to reheat.

Equipment

  • 9x13-inch baking dish

Ingredients

For casserole

  • 1 pound pork sausage
  • 2 cups cheddar cheese
  • 2/3 cup milk whole or 2%
  • 8 large eggs
  • 16 ounce can biscuits refrigerated biscuits
  • 2 cups sausage gravy
  • salt and pepper to taste
  • green onions sliced - optional garnish

For gravy

  • grease from browning 1 pound of sausage
  • 2 tablespoons solid vegetable shortening
  • 1/4 cup all-purpose flour
  • 3 cup milk whole or 2% can be used
  • salt and pepper to taste

Instructions

For the gravy

  • In a large skillet, brown the sausage. Remove the sausage leaving the grease in the pan. Add 2 tablespoons shortening to the pan. 
  • Once the shortening is melted, whisk in the flour and cook for 2 minutes.
  • Whisk in the milk. Whisk until no lumps remain. Add salt and pepper. Simmer over low heat about 15 minutes or until thick. (About the thickness of pancake batter.)

Assemble the Casserole

  • Preheat oven to 350 degrees F. Spray a 9x13-inch baking pan with non-stick spray.
  • In a bowl, whisk together eggs and 2/3 cup milk. Add salt and pepper. 
  • Cut biscuits into 3 or 4 pieces and add them to the baking pan in a single layer.
  • Evenly spread sausage and cheese over the biscuits.
  • Pour egg mixture over the biscuits.
  • Carefully pour 2 cups gravy over the eggs. Reserve remaining gravy to serve with the casserole.
  • Bake at 350 for 35 minutes or until brown on top and set in the center. Serve warm. Garnish with green onions if desired.

    I am confused about how instructions call for slow cooker, but in the picture, it’s clearly baked in a dish. Also, I do not understand the random sprig of rosemary on top, which isn’t edible, and isn’t even in the recipe.

      You can make it up through step 5 where you pour the eggs over the biscuits. Refrigerate.
      Then in the morning top with gravy and bake.

    Is it a total of 3 2/3 cup milk? Ingredients call for 3 cups, all added to the sausage mixture, then 2/3 with the eggs.
